Sweet Potato Brownies

Ingredients
  

  • 1 medium sweet potato about 1 cup mashed
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chocolate chips optional

Prep

  • Preheat the oven to 350°F (180°C). Grease an 8x8 inch baking dish with cooking spray or line with parchment paper.
  • Peel and dice the sweet potato into small pieces. Steam or boil the sweet potato until it is tender, then mash it with a fork or puree it in a blender or food processor until smooth.

Combine

  • In a mixing bowl, combine the mashed sweet potato, almond butter, maple syrup, and coconut sugar. Mix well.

  • Add the cocoa powder, vanilla extract, baking powder, and salt to the mixing bowl. Mix until well combined.

  • Fold in the chocolate chips, if using.

Bake

  • Pour the brownie batter into the prepared baking dish and smooth the top with a spatula.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the brownies to cool for 10-15 minutes before slicing and serving.
