Coconut Sugar Chocolate Chip Cookies

Ingredients
  

  • 1 cup coconut sugar
  • 1 cup coconut oil melted and cooled
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips

Prep

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.

Mix Wet Ingredients

  • In a large mixing bowl, combine the coconut sugar, melted coconut oil, eggs, and vanilla extract. Mix well until smooth.

Mix Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
    2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt
  • Add the dry ingredients to the wet ingredients and stir until just combined.
  • Fold in the chocolate chips.
    1 1/2 cups semisweet chocolate chips

Bake

  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
