Instructions
Prep
Place the cubed watermelon on a baking sheet lined with parchment paper. Freeze for about 2-3 hours, or until the watermelon is completely frozen.
4 cups cubed seedless watermelon
Sorbet
Once the watermelon is frozen, transfer it to a blender or food processor.
Add the lime juice and agave syrup to the blender or food processor with the frozen watermelon.
1/4 cup fresh lime juice,
1/4 cup agave syrup or sweetener of your choice
Blend until smooth and creamy. You may need to stop and scrape down the sides of the blender or food processor a few times to ensure even blending.
Freeze
Once the mixture is smooth, transfer it to a container with a lid and place it in the freezer for another 2-3 hours, or until it firms up.
Serve
Remove the watermelon sorbet from the freezer and let it sit at room temperature for a few minutes to soften slightly before serving.
Scoop the sorbet into serving bowls or glasses.
Garnish with fresh mint leaves, if desired.
