Pumpkin Protein Balls

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup nut butter such as almond butter or peanut butter
  • 1/4 cup protein powder of your choice
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin spice optional
  • Pinch of salt
  • Optional toppings: shredded coconut chopped nuts, or chocolate chips

Instructions
 

Mix

  • In a mixing bowl, combine the rolled oats, pumpkin puree, nut butter, protein powder, maple syrup or honey, vanilla extract, pumpkin spice (if using), and salt. Mix well until all the ingredients are well combined.

  • If the mixture seems too wet, add a little more rolled oats. If it seems too dry, add a little more pumpkin puree or nut butter.
  • Once the mixture is well combined, let it rest in the refrigerator for about 15-30 minutes. This will make it easier to shape into balls.

Chill

  • After chilling, take small portions of the mixture and roll them into bite-sized balls between your palms.
  • If desired, roll the protein balls in shredded coconut, chopped nuts, or chocolate chips for added flavor and texture.

  • Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour, or until firm.
  • Store the protein balls in an airtight container in the refrigerator for up to one week.
