Lemon Bars

Ingredients
  

For the crust

  • 2 cups almond flour
  • 1/4 cup coconut oil melted
  • 2 tbsp maple syrup
  • 1/4 tsp salt

For the filling

  • 4 large eggs
  • 3/4 cup freshly squeezed lemon juice from about 4-5 lemons
  • 1 cup granulated sugar
  • 1/4 cup almond flour
  • 1/4 tsp salt

Prep

  • Preheat your oven to 350°F (180°C). Grease an 8x8-inch baking dish with coconut oil or cooking spray.

Mix Crust

  • In a mixing bowl, combine the almond flour, melted coconut oil, maple syrup, and salt for the crust. Mix until the ingredients are well combined and the dough is crumbly.
    2 cups almond flour, 1/4 cup coconut oil, 2 tbsp maple syrup, 1/4 tsp salt
  • Press the dough into the bottom of the prepared baking dish, making sure to spread it evenly.

Bake Crust

  • Bake the crust in the preheated oven for 12-15 minutes or until it is slightly golden brown. Remove from the oven and set aside.

Mix Filling

  • In a separate mixing bowl, whisk together the eggs, lemon juice, granulated sugar, almond flour, and salt until well combined.
    4 large eggs, 3/4 cup freshly squeezed lemon juice, 1 cup granulated sugar, 1/4 cup almond flour, 1/4 tsp salt
  • Pour the lemon filling over the pre-baked crust.

Bake

  • Bake the lemon bars for 20-25 minutes, or until the filling is set and the edges are golden brown.
  • Remove the baking dish from the oven and allow the lemon bars to cool completely on a wire rack.
  • Once cooled, slice the lemon bars into squares and serve.
